Positive Thinking

As I sit at home and watch everything in the news regarding the pandemic, I have to say it has made me more aware of a few things. I find that I’m using food items on the pantry shelf and in the freezer more efficiently (some of those items have not seen the light of day in quite sometime.) I’ve been procrastinating about cleaning out and defrosting the freezer for quite awhile - this just forces me to do that task. I’m re-creating leftovers into whole new dishes. Admittedly, some of my “creations” got a thumbs-down from my family - oh well, guess we can’t win ’em all. These things I mentioned have been my effort to cut down on trips into town and to the grocery store, therefore minimizing potential exposure to COVID-19.

More positives...I’m getting caught up on e-mails and correspondence, my closets are getting cleaned out and organized, I’ve been reading more and watching TV less (every channel seems to be reporting only on the Coronavirus anyway) so reading has been a sweet and welcomed escape.
