A new food business is already making an impression, selling more than 50 lunch wraps on its very first day.
Prairie Carrie Co., a new local food venture, celebrated a successful launch last Wednesday, selling 53 wraps to hungry customers eager to support the new business.
Owner Carrie Hampton said the response exceeded expectations and has her thinking about the best way to keep up with demand.
“The first day went great! We sold 53 wraps,” she said. “I’m trying to figure out a good rhythm for lunches.”
For now, Prairie Carrie Co. plans to offer lunches twice a week. Customers will be able to place pre-orders the day before and pick them up the following day, while walk-in customers will be welcome from 11 a.m. to 2 p.m. on those days. This week, Prairie Carrie Co. will be serving lunches on Tuesday and Thursday.
Because the business is still growing, Hampton said exact hours may continue to evolve as she finds what works best. The story behind Prairie Carrie Co. is just as wholesome as the homemade food. “It all started by making peanut butter cookies for our bus driver, and the rest was history,” she said. “I joked with my best friend about being the ‘knockoff Pioneer Woman,’ and that’s where Prairie Carrie came from.”
Today, the business offers homemade meals and baked goods, with one standout favorite.
“My favorite item is the Monster Cookie,” Hampton said.
Looking ahead, she has no shortage of ideas for the future. While the current pre-order model works well for balancing family and business, she hopes to eventually expand operations.
Future plans include offering freezer meals, establishing regular business hours with graband- go items, and even hosting recurring dining events at the local hotel, such as steak nights or seafood boils.
“I may eventually get away from pre-orders and just have things out for people to come and get with regular hours,” she said. “But right now this is best for us.”
As Prairie Carrie Co. continues to grow, the focus remains on homemade food, friendly service, and building relationships within the community— one wrap and one Monster Cookie at a time.
