The family of Joy Jensen Howell is planning a birthday celebration in honor of her 80th birthday on Saturday, July 26, from 1 to 3 p.m. at the Greenwood Hotel in Eureka.
Howell, who will officially turn 80 on Tuesday, July 29, was born and raised on a farm and ranch in South Dakota. She spent time in Norfolk, Neb., before moving to Eureka in 1979 with her then husband and two children, Deanna and Dale.
After settling in Eureka, Joy began leasing what was then Barb’s Cafe— soon taking over full ownership just nine months later. That business, which started as Jensen’s Cafe, evolved into The Paddock Super Club after adding a private club. Even after her divorce, Howell continued to serve the community through the restaurant and her popular Aunt Joy’s Catering services, which she operated until 2011.
After 21 years with what she referred to as wonderful customers and amazing employees, Howell sold The Paddock in 2000 and later co-owned Eureka Sign Works with her daughter Deanna, continuing to cater from the back of the shop.
Never one to slow down, Howell took her love for cooking on the road—building a conc ession trailer and travel ing across the state to fairs, lakes, and feed lots throughout we s t e r n Kansas. In 1990, her curiosity led her to the field trial community— horseback riders and dog enthusiasts— where she quickly became a beloved supporter. She continues to organize meals, raise funds and provide hospitality for the Short Hair and Gordon Setter organizations.
Though she retired from cooking, Howell embraced a new passion, teaching relaxation meditation, energy healing and vibrational sound therapy; something she continues to offer via online or by appointment.
In 2021, Howell found love again and married Tom, adding a joyful new chapter to her life.
